Ingredients
- CAKE:
- 2-1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1-3/4 cups refrigerated unsweetened coconut milk
- 1-1/2 cups sugar
- 1/3 cup canola oil
- 2 tablespoons cider vinegar
- 1 teaspoon vanilla extract
- FROSTING:
- 1 cup dairy-free margarine, softened
- 3 cups confectioners' sugar
- 1/3 cup baking cocoa
- 2 teaspoons vanilla extract
- Optional, vegan sprinkles
Directions
- Preheat oven to 350°.
- In a large bowl, whisk together flour, baking powder, baking soda and salt. In a small bowl, whisk together coconut milk, sugar, oil, vinegar and vanilla. Once combined, stir wet ingredients into dry ingredients until just moistened.
- Pour batter into two greased 9-in. round baking pans. Bake 30-35 minutes or until a toothpick inserted in the center comes out clean. Let sit 10 minutes. Remove from pans; transfer to wire racks to cool completely.
- In a large bowl, beat softened margarine until fluffy. Add confectioners' sugar, baking cocoa and vanilla extract; beat on low at first, then high, until frosting is silky smooth. Frost the top of one cake. Stack the other cake on top; frost the top and sides to make a 2-layer cake. Top with sprinkles, if desired.
