Loaded with seafood, eggs and fresh veggies, and drizzled in tangy creamy dressing, shrimp Louie is a retro salad that deserves another turn in the spotlight.
Ingredients
- 1/2 cup mayonnaise
- 1/4 cup ketchup
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- Dash hot pepper sauce
- 1 pound uncooked shrimp (26-30 per pound), peeled and deveined
- 2 tablespoons canola oil
- 1 teaspoon seafood seasoning
- 1 bunch romaine, chopped
- 1 medium ripe avocado, peeled and sliced
- 1 cup cherry tomatoes, halved
- 4 hard-boiled large eggs, sliced
Directions
- In a small bowl, combine the first 6 ingredients.
- In a large skillet, heat oil over medium heat. Add shrimp. Sprinkle with seafood seasoning. Cook and stir until shrimp turn pink, 6-8 minutes.
- To serve, arrange romaine on 4 individual serving plates. Top with avocado, tomatoes, eggs and shrimp. Serve with dressing.
