Shrimp Louie

Loaded with seafood, eggs and fresh veggies, and drizzled in tangy creamy dressing, shrimp Louie is a retro salad that deserves another turn in the spotlight.

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Dash hot pepper sauce
  • 1 pound uncooked shrimp (26-30 per pound), peeled and deveined
  • 2 tablespoons canola oil
  • 1 teaspoon seafood seasoning
  • 1 bunch romaine, chopped
  • 1 medium ripe avocado, peeled and sliced
  • 1 cup cherry tomatoes, halved
  • 4 hard-boiled large eggs, sliced

Directions

  1. In a small bowl, combine the first 6 ingredients.
  2. In a large skillet, heat oil over medium heat. Add shrimp. Sprinkle with seafood seasoning. Cook and stir until shrimp turn pink, 6-8 minutes.
  3. To serve, arrange romaine on 4 individual serving plates. Top with avocado, tomatoes, eggs and shrimp. Serve with dressing.
