Pecan Pie Muffins

Brown sugar and nuts get folded into these sweet and soft pecan pie muffins. They’re ideal for breakfast, and they're such a treat that they can even be served for dessert.

Ingredients

  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans
  • 2/3 cup butter, melted
  • 2 eggs, lightly beaten

Directions

  1. In a large bowl, combine the brown sugar, flour and pecans. Combine butter and eggs. Stir into brown sugar mixture.
  2. Fill greased and floured miniature muffin cups two-thirds full. Bake at 350° until a toothpick inserted in the center comes out clean, 22-25 minutes. Immediately remove from pans to wire racks to cool.
