Who needs a pan? This single-serve pancake in a mug is ready in just minutes—all you need is a microwave and a few ingredients that you probably already have at home.
Ingredients
- 2 teaspoons butter
- 1 tablespoon sugar
- 3/4 teaspoon vanilla extract
- 1/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- Pinch salt
- 1/4 cup whole milk
- Maple syrup, berries, whipped cream, for topping
Directions
- Place butter in a microwave-safe coffee mug. Microwave 30-60 seconds or until melted. Add sugar and vanilla extract; stir to combine. Add flour, baking powder, cinnamon and salt; stir to combine. Pour in milk; use a fork to stir vigorously into a mostly smooth batter with a few visible lumps.
- Microwave on high power 2 1/2 to 3 minutes or until pancake is fully cooked. A knife inserted into the center and around the edges of the pancake should come out clean.
- Add desired toppings; enjoy while hot.
