New Jersey Pork Roll Sliders

Ingredients

  • 1 package (12 ounces) Hawaiian sweet rolls
  • 1/2 pound thinly sliced Taylor Pork Roll
  • 6 large eggs
  • 6 slices American cheese
  • 1/2 cup butter, melted
  • 2 teaspoons poppy seeds

Directions

  1. Preheat oven to 350°. Without separating the rolls, cut rolls in half horizontally. Arrange bottom halves of rolls in a greased 9x13-in. baking dish.
  2. For each pork roll slice, make 4 cuts from the outer edges inwards, 1/2 in. toward the center, evenly spaced around the outside of each slice. In a large skillet over medium heat, cook pork roll slices until edges are crisp, 1-2 minutes per side. Layer on top of sweet roll bottoms.
  3. In the same skillet, break eggs, 1 at a time, into pan; reduce heat to low. Cook until whites are set and yolks begin to thicken, turning once if desired. Layer eggs over cooked pork roll slices. Top with American cheese slices; replace top half of rolls. Pour melted butter over tops of rolls; sprinkle with poppy seeds.
  4. Bake, uncovered, until tops are golden brown and cheese has melted, 15-17 minutes.
