Lucy Wang’s Watermelon Soju

Soju is recognized as the alcoholic beverage in South Korea. It’s served in restaurants and karaoke rooms, and has a ton of variations. This one is with watermelon—sweet, refreshing and ice cold! —Lucy Wang, Los Angeles, California

Ingredients

  • 1 mini seedless watermelon
  • Fresh mint leaves
  • 1/2 cup soju
  • 1/4 cup Sprite
  • Ice cubes

Directions

  1. Cut the watermelon in half. Using a round spoon, scoop out half spheres in a clockwise motion, then set aside. Scoop the remaining watermelon and pour it into a blender.
  2. In the blender, add 1 cup of ice, 1/2 cup of soju and 1/4 cup of Sprite; blend until smooth.
  3. Rehydrate mint leaves in ice-cold water.
  4. Fill the watermelon bowl with ice and blended watermelon soju you just made.
  5. Garnish with the watermelon half spheres you scooped from earlier and fresh mint leaves.
