I love baking cookies for family and friends. I was getting bored making the same cookies over and over again, so I decided to come up with my own. My love of Key lime pie inspired these. —Suzy Wade, Deltona, Florida

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1-1/2 cups sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1/2 teaspoon grated Key lime zest
  • 2 tablespoons Key lime juice
  • 3 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup graham cracker crumbs

Directions

  1. Preheat oven to 350°. In a large bowl, cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg, egg yolk, and lime zest and juice. In another bowl, whisk flour, cream of tartar, baking soda and salt; gradually beat into creamed mixture.
  2. Shape tablespoonfuls of dough into balls. Roll in graham cracker crumbs and place 2 in. apart on greased baking sheets. Bake until edges just begin to crack and tops are set, 8-10 minutes. Let cool for 5 minutes before removing from pans to wire racks to cool completely.
