Hetal Vasavada’s Cookie Bars

Ingredients
- 1/2 cup packed brown sugar
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 large egg, room temperature
- 1/2 cup unsalted butter, melted and cooled
- 1 cup all-purpose flour
- optional mix-ins (choose one):
- 1/2 cup semisweet chocolate chips and 1/2 teaspoon flaky sea salt
- 1/2 cup pistachios and zest of 1 lemon
- 1/2 cup semisweet chocolate chips, graham cracker crumbs and 1/4 cup miniature marshmallows
- 1/2 cup chopped salted peanuts, 1/4 cup chunky peanut butter and grape jelly
Directions
- Preheat oven to 350°. In a large bowl, add brown sugar, granulated sugar, vanilla, salt, baking soda and egg; mix for 1 minute. Add melted butter and mix for 1 minute or until well combined. Add the flour and mix well. Add in your choice of mix-ins and mix well.
- Spread your cookie mixture into an 8x8-inch square pan and bake for 20-25 minutes or until golden brown.
- Cool for 10 minutes before gently turning the cookie bars out to cool on a rack before cutting.
