Gluten-free peach cobbler is made with sweet peaches nestled in a buttery, golden brown crust. This recipe is a summer dessert everyone can enjoy.
Ingredients
- 4 cups sliced peeled fresh or frozen peaches, thawed
- 3/4 cup sugar, divided
- 1/2 teaspoon almond extract
- 1/3 cup butter, melted
- 3/4 cup gluten-free baking flour (with xanthan gum)
- 2 teaspoons baking powder
- Pinch salt
- 3/4 cup 2% milk
- Vanilla ice cream, optional
Directions
- Preheat oven to 350°. In a large bowl, gently toss peaches, 1/4 cup sugar and extract; set aside. Pour butter into a 2-qt. baking dish.
- In a small bowl, combine flour, baking powder, salt and remaining 1/2 cup sugar; stir in milk until smooth. Let stand 10-15 minutes. Pour evenly over butter (do not stir). Top with peach mixture.
- Bake until golden brown and bubbly, 50-55 minutes. Serve with ice cream if desired.
