
Copycat Panera Tomato Soup

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 2 cans (28 ounces each) diced tomatoes, undrained, such as San Marzano
- 1 cup vegetable broth
- 1/4 cup chopped fresh basil
- 1 tablespoon sugar
- 3/4 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup heavy whipping cream
- Salad croutons, optional
Directions
- In a Dutch oven, heat oil over medium-high heat. Add onion; cook and stir until tender, about 5 minutes. Add garlic; cook and stir 1 minute longer. Stir in tomatoes, broth, basil, sugar and seasonings; bring to a boil. Reduce heat; simmer, covered, 10-15 minutes or until tomatoes and onion are tender.
- Puree soup using an immersion blender. Or cool slightly and puree soup in batches in a blender; return to pan. Add cream; cook and stir until heated through. If desired, garnish with croutons and additional basil and heavy cream.
