Cilantro-Lime Rice

Ingredients
- 1 cup uncooked jasmine rice
- 2 cups reduced-sodium chicken broth
- 2 tablespoons lime juice
- 2 tablespoons minced fresh cilantro
- 1/8 teaspoon ground nutmeg
Directions
- In a small saucepan, combine rice and broth; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, 12-15 minutes. Add lime juice, cilantro and nutmeg; fluff with a fork.
