Though it may feature simple ingredients, this recipe for sauteed cherry tomatoes and mozzarella makes a sophisticated and versatile side dish packed with freshness.

  • Olive oil
  • Shallots
  • Thyme
  • Garlic
  • Cherry tomatoes

Directions

Step 1: Saute the shallots, thyme and garlic

In a large skillet, heat the oil over medium-high heat. Saute the shallots with the thyme until they’re tender. Add the minced garlic, then cook and stir until fragrant, about one minute.

Step 2: Add the tomatoes

Stir in the tomatoes, salt and pepper, and continue cooking until they’re heated through.

Step 3: Finish with the cheese

Remove the pan from the heat and stir in the cheese.
