I’m not the only one who grew up eating dry pork chops (sorry, Mom!). But to be fair, it’s easy to overcook this lean cut. Adding stuffing is a great way to ensure pork chops remain juicy and moist after cooking. This air-fryer stuffed pork chops recipe combines tender pork rib chops with a flavorful, savory bread stuffing seasoned with fresh parsley and dried herbs. Baking these stuffed pork chops in the air fryer ensures they cook evenly and quickly. Serve them with your favorite easy side dishes, like mashed potatoes, roasted vegetables, or creamy macaroni and cheese.

Air-Fryer Stuffed Pork Chop Ingredients

  • Olive oil: When cooking with olive oil, use regular olive oil; save the extra virgin olive oil for dressings and marinades, where its flavor can really shine. If you don’t have olive oil, a neutral cooking oil, like canola or vegetable, works. Use melted butter or ghee to saute the veggies for even more flavor.
  • Vegetables: Celery and onion are aromatic vegetables that add flavor and texture to the stuffing.
  • White bread: This stuffing recipe can be made with cubed French, Italian or even sourdough bread. Stale or day-old bread is best for soaking up the broth and seasonings. If you have only fresh bread on hand, you can lightly toast it in a 300° oven for a few minutes before adding it to the recipe.
  • Fresh parsley: Minced parsley adds a fresh herbaceous flavor to the stuffing. If necessary, substitute 2 teaspoons dried parsley for the 2 tablespoons fresh minced parsley.
  • Stuffing seasoning: This stuffing’s seasonings consist of salt, rubbed sage, white pepper, dried marjoram and dried thyme.
  • Chicken broth: Chicken broth ensures the stuffing is packed full of flavor. Use any favorite store-bought brand if you don’t have homemade chicken broth. Be sure to use a reduced-sodium variety to control the overall amount of salt in the recipe.
  • Pork rib chops: When cooking pork chops, you usually need to decide between bone-in or boneless pork chops; both are the best cut of pork for this recipe. However, creating the pocket for filling can be more challenging if you go the bone-in route. Boneless chops are easier to handle, and they tend to cook more evenly in the air fryer.
  • Pork chop seasoning: Season the pork chops with salt and pepper before air-frying.

Directions

Step 1: Make the stuffing

In a large skillet, heat the oil over medium-high heat. Add the celery and onion. Cook and stir until tender, four to five minutes. Remove from the heat. In a large bowl, combine the bread and stuffing seasonings. Add the celery mixture and broth. Toss to coat.

Step 2: Stuff the pork chops

Cut a pocket in each pork chop by making a horizontal slice almost to the bone. Fill the chops with the bread mixture and secure with toothpicks if necessary.

Step 3: Cook the pork chops

Preheat the air fryer to 325°F. Sprinkle the chops with salt and pepper. Arrange the stuffed pork chops in a single layer on a greased tray in the air-fryer basket. Cook for 10 minutes. Turn and continue cooking until a thermometer inserted into the center of the stuffing reads 165° and a thermometer inserted into the pork reads at least 145°, six to eight minutes longer. Let the chops stand for five minutes. Discard the toothpicks before serving.

Editor’s Tip: Depending on your air-fryer model, you may need to adjust the cooking time. In general, higher-wattage models tend to cook foods faster than lower-wattage ones.

Air-Fryer Stuffed Pork Chop Variations

  • Switch up the stuffing: You can easily switch up the flavor profile of these air-fryer stuffed pork chops by changing the stuffing recipe. A few delicious flavor combinations include spinach and feta, apple and walnut, or mushroom and onion. Add a combination of fresh or dried herbs to pack in even more flavor.
  • Swap in different seasonings: In addition to playing around with the flavors in the stuffing, change the seasonings used on the pork. An easy way to build flavor is by using a spice blend such as Italian seasoning or za’atar. If you like things with a little heat, try seasoning the pork with a Cajun or Creole seasoning blend.
  • Make gluten-free stuffing: For gluten-free stuffed pork chops in the air fryer, use gluten-free bread or bread crumbs instead of the white bread called for in the recipe. Additionally, check the chicken broth to ensure it is certified gluten-free.

After allowing the stuffed pork chops to cool, transfer them to an airtight container and refrigerate. As with all cooked meats, the stuffed pork chops shouldn’t be at room temperature for more than two hours.

How can you tell when stuffed pork chops are done?

Stuffed pork chops are finished cooking when the thickest part of the meat reaches 145°, the right internal temperature for pork chops. The meat inside may still be a little pink at this temperature, but it is safe to eat (and deliciously tender!). If you don’t have a thermometer, look for the exterior to turn golden brown and the meat to be firm. When cut into, the meat should be a slight blush of pink in the center. The stuffing should be hot to the touch.
